Personal Peach Crumble

Sometimes you just want a little dessert only for yourself. This 6 ingredient crumble comes together in minutes and baked in your airfryer. Enjoy for breakfast or dessert, this recipe is making summer peaches the star of the show.

Start with seasonal fresh peaches, its okay if they are starting to get soft. Peaches have fuzzy skin, some find it unpleasant to eat. I recommend peeling the peaches, but I will leave that detail up to you.

Personal Peach Crumble Recipe

Yield: 2 servings (one, 12 oz ramekin)

Prep time: 10 minutes

Bake time: 15 to 20 minutes



Ingredients:

1 to 2 yellow peach, peeled and diced

1/2 cup rolled oats

2 TBSP Pepitas (pumpkin seeds)

2 TBSP maple syrup (or sweetener of choice)

1 TBSP coconut oil, softened (or butter)

pinch of sea salt

handful blueberries for garnish

1/2 TBSP arrowroot, optional for a thicker consistency (see note below)


Preparation:

  1. Add diced peach to the bottom of a ramekin (personal sized baking dish)

  2. In a small mixing bowl, add oats, pepitas, maple syrup, coconut oil and a pinch of salt. Mix until coconut oil is dispersed evenly with the oats.

  3. Add oat mixture to the top of the peaches in the ramekin

  4. Bake at 375℉ for 15 to 20 minutes, or until juices start to bubble and oats are golden brown.

  5. Allow to cool at room temperature for 10 to 15 minutes before eating.

Chef Notes:

  1. If you want a thicker pie like peach filling, toss the diced peaches with 1/2 TBSP of arrowroot or cornstarch, before adding to the ramekin.

  2. You can use any size ramekin, I am using a 12 oz baking dish, but consider using one of these ramekins if you don't already own some.
