A quick and easy rendition of Pad Thai is bound to become a weeknight staple in your home. It comes together in under 20 minutes and you can add pretty much any protein or vegetables you have on hand.
The real secret to this recipe is the smoke and fire peanut butter. You can opt to use regular peanut butter or a nut/seed butter of choice but you may want to consider adding some sriracha or chili paste to spice things up.

Easy Pad Thai Recipe
Yield: 2 servings
Large spoonful of peanut butter (1/4 cup)
I recommend @fixandfogg smoke and fire peanut butter
1 TBSP soy sauce
1 tsp fish sauce (optional)
1 tsp sesame oil
1/2 TBSP rice vinegar
1/4 cup cold water
8 oz of @lotusfoods Pad Thai noodles
1/4 cup cilantro, chopped
Optional Add Ins
1 cup cabbage, thin sliced
1 cup chicken, shredded or diced
1 cup tofu, diced
1/4 cup green onion
1/4 cup carrot, shredded
1 cup broccoli florets
Bean sprouts
Pea Shoots
Directions:
In a mixing bowl whisk together peanut butter, soy sauce, fish sauce, sesame oil, rice vinegar and cold water. Set aside.
Cook pad thai noodles according to package directions.
Over medium heat on the stove top add a splash of sesame oil and a splash of avocado oil to a saute pan. Add meat and vegetables of choice and cook until tender.
Add cooked noodles and sauce to the saute pan and toss with tongs to combine.
Garnish with sprouts, scallions and herbs
